Turkey Bolognese with Zucchini Noodles

Ingredients: (yields 3 servings)
1 pound ground turkey meat
1 jar Marinara Sauce
1 package zucchini spirals (about 1 quart)
5 garlic cloves, minced
½ white or yellow onion, finely diced
2 Tbsp Olive Oil
2 oz. Parmesan Cheese
1 oz. Fresh Basil
Dash of salt and pepper
Instructions:
Heat large skillet over medium heat with 1 Tbsp Olive Oil.
Place turkey meat, diced onion, and the minced garlic in skillet and cook until turkey is slightly cooked and no longer pink.
Pour contents of sauce over the turkey and bring to a boil.
Reduce heat to simmer for about 10-15 minutes while continuing to stir the mixture.
While this is simmering, take another medium skillet and place over medium heat with 1 Tbsp Olive Oil.
Pour in zucchini spirals with a dash of salt and pepper, and continue to stir for about 8 minutes or until noodles are soft, but not soggy.
Once zucchini is cooked, strain the noodles so excess water is removed.
Pour noodles on the plate, and then top with the turkey bolognese and sprinkle with Parmesan cheese and basil.
