Fiber-Crusted Chicken Breast

Ingredients: (yields two servings, two chicken breasts)

  • 1 lb. boneless skinless chicken breasts

  • 2 egg whites

  • 1 cup Fiber one original bran cereal

  • 1-2 Tbsp Virgin Olive Oil

  • 1/2 tsp Italian seasoning

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt and pepper to taste

Instructions:

  1. In a food processor, add in cereal and all seasonings and blend until fine. Or, you can place in a large Ziploc bag and crush with a rolling pin.

  2. Place crumbs on a large plate.

  3. In a small bowl, whisk together egg whites.

  4. Take chicken breast and dip into egg white mixture and then onto the plate of bread crumbs until chicken is evenly breaded.

  5. Place skillet over medium heat and add in the olive oil. Place the chicken breasts and pan fry until each side is lightly browned and internal temperature reaches 165 F.

  6. For a little extra crunch, preheat oven to 375F, and bake the pan-fried cooked chicken for 10 minutes.

  7. Enjoy with your sides of choice.
