Chicken Bruschetta

Ingredients: (makes 2 servings)
For the chicken:
2 large, boneless skinless thin sliced chicken breast
1 tablespoon Extra virgin olive oil
2 teaspoons Italian seasoning
2 teaspoons minced garlic
Dash of salt and pepper
1 oz. part-skim Mozzarella cheese (optional)
For the Bruschetta:
3 Plum tomatoes (finely diced)
1/4 red onion (finely diced)
1 garlic clove (finely diced)
2 tablespoons extra virgin olive oil
1 tablespoon shredded basil
Dash of salt
Instructions:
For Bruschetta:
First to make the Bruschetta, finely dice tomatoes, onion, and garlic and place in a small bowl.
Add in the olive oil, basil, and salt and mix together until combined. Set aside.
For Chicken:
Preheat oven to 400 degrees F.
Take chicken breasts and season with Italian seasoning and dash of salt and pepper.
Place skillet over medium heat on the stovetop and coat pan with olive oil.
Place chicken on skillet and cook for about 12-15 minutes, or until chicken is fully cooked through and slightly browned.
Lay cooked chicken on a baking sheet and place mozzarella cheese over the chicken.
Place in oven and cook chicken for about 5 minutes, or until cheese is slightly browned.
After removing from oven, add the bruschetta mixture on top of the chicken and serve immediately.
Optional: drizzle with Balsamic glaze
