Honey Garlic Chicken Skewers
Ingredients: (yields 8 skewers)
2 large chicken breasts, cut into 8, 1-inch strips (about 1 pound)
1/2 cup honey
2 tablespoons soy sauce (or Tamari for gluten free)
2 tablespoons white vinegar
1 tablespoon corn starch (for thickening sauce) - this is optional
½ teaspoon minced ginger
3/4 teaspoon garlic powder
8 skewers
Top with a sprinkle of sesame seeds and chopped green onion
Instructions:
Preheat oven to 400 F.
Whisk together honey, soy sauce, vinegar, ginger and garlic powder in a bowl until combined.
Soak skewers in water for 10 mins.
Insert chicken strips onto skewers.
Marinade chicken in the sauce for 2 hours - keep a bit of marinade aside for basting while cooking. (works best by marinading in a large gallon Ziploc bag)
Lay chicken on a parchment-lined baking sheet and cook in oven for 14 minutes. Baste as necessary and flip once at 7 mins.
Serve immediately and enjoy!
