Shrimp Tacos

Ingredients: (yields 9 tacos)
1 lb raw, previously peeled white shrimp
Shrimp Seasoning:
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
3 cups shredded cabbage or slaw
1/2 small bunch cilantro, finely chopped
1 Tbsp Olive oil for frying shrimp (or avocado oil or coconut oil)
Ground black pepper, to taste
9 high fiber, low carb tortillas (I use Xtreme Wellness High Fiber, Low Carb Wraps)
Ingredients for Shrimp Crema Sauce
1/2 cup plain 2% greek yogurt (or light sour cream)
1/4 cup avocado oil
1 tsp Adobo sauce
juice of one lime
1/4 tsp salt
Pinch of cayenne
dash of garlic powder, onion powder, chili powder
Ground black pepper, to taste
Instructions:
In a medium bowl, add shrimp, seasonings, and pepper. Mix and set aside.
In a small bowl, add yogurt, avocado oil, adobo sauce, lime juice, seasonings, cayenne and black pepper. Stir and set aside.
Preheat large non-stick skillet on high heat and add olive oil and shrimp. Cook until pink on the bottom, flip and cook until no longer gray. Grill until desired color (pink, blackened, etc.)
In a large bowl, add cabbage, cilantro, salt and almost all of the sauce, reserving some for drizzling on tacos. Stir gently.
Warm tortillas in a cast iron skillet on high heat for 10 seconds per side and pressing on with spatula (or for 20 seconds in microwave). Fill each tortilla with 3-4 shrimps, some slaw and drizzle with sauce. Serve immediately.
Optional: fill tacos with diced avocados, mangos, pineapple salsa, etc!
