Raspberry Vinaigrette
Ingredients: (yields 1 pint of dressing)
1/4 cup Red wine vinegar
1/4 cup Rice wine vinegar
1/2 Tbsp Lemon juice
3/4 tsp Dried thyme
3/4 tsp Salt
3/4 tsp Black pepper
1 tsp Garlic, minced
2 Tbsp Honey
1/4 cup Raspberry preserves, without seeds
3/4 cup + 1 Tbsp olive oil
Ingredients:
Whisk together the vinegars, lemon juice, thyme, salt, pepper, and garlic.
Whisk in the honey and raspberry preserves.
Slowly whisk in the oil, emulsifying the dressing.
(Note: this will be a temporary emulsion, shake well prior to use. Keep refrigerated.)
