Raspberry Vinaigrette

Raspberry Vinaigrette

Ingredients: (yields 1 pint of dressing)

  • 1/4 cup Red wine vinegar

  • 1/4 cup Rice wine vinegar

  • 1/2 Tbsp Lemon juice

  • 3/4 tsp Dried thyme

  • 3/4 tsp Salt

  • 3/4 tsp Black pepper

  • 1 tsp Garlic, minced

  • 2 Tbsp Honey

  • 1/4 cup Raspberry preserves, without seeds

  • 3/4 cup + 1 Tbsp olive oil

Ingredients:

  1. Whisk together the vinegars, lemon juice, thyme, salt, pepper, and garlic.

  2. Whisk in the honey and raspberry preserves.

  3. Slowly whisk in the oil, emulsifying the dressing.

    (Note: this will be a temporary emulsion, shake well prior to use. Keep refrigerated.)
