Mini Banana Bread Loafs with Added Fiber

Ingredients: yields 8 mini loafs (16 servings)

  • 1 cup Whole Wheat Flour

  • 1 cup Original All Bran Cereal, finely crushed

  • 1 cup ripened bananas, mashed

  • ½ cup Dark chocolate chips

  • ⅓ cup honey

  • ¼ cup Unsweetened Almond Milk

  • ¼ cup Light Margarine, softened

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt


Instructions:

  1. Preheat oven to 350F.

  2. In a large bowl, whisk together all of the dry ingredients. (flour, bran cereal, baking powder, baking soda, and salt.

  3. In another medium sized bowl, mix together the wet ingredients. (bananas, honey, milk, margarine, vanilla, and eggs)

  4. Pour the wet ingredients into the bowl of the dry ingredients and mix until all ingredients are moistened.

  5. Fold in the dark chocolate chips until evenly combined.

  6. Lightly spray mini loaf pan with cooking spray.

  7. Pour the batter into an 8 compartment mini loaf pan.

  8. Bake for 35 minutes or until toothpick comes out clean.

  9. Let sit on cooling rack for 25 minutes and enjoy!
