Toasted Pine Nut Dressing

*Note: This dressing is best served over a bed of spinach! Do not refrigerate as oil will coagulate in cold temps. Store in airtight container in cool, dry place.

Ingredients: (yields about 4 servings)

  • 1/4 cup olive oil

  • 1/4 cup Italian pine nuts

  • 6 cloves garlic- finely minced

Instructions:

  1. In a small sauce pan bring 1/4 cup olive oil to medium heat (or enough to cover whole bottom of pan).

  2. Once heated, add in minced garlic and pine nuts.

  3. Stir occasionally until pine nuts are LIGHTLY toasted. You need to be careful as the pine nuts toast easily. It should only take about 5-6 minutes.

  4. Remove mixture from heat and pour into small bowl.

  5. Let cool for about 10-15 minutes.
