Thai Peanut Dressing

Ingredients: yields 4 servings

  • 1/4 cup natural- creamy peanut butter

  • 2 tbsp unseasoned rice vinegar

  • 2 tbsp lime juice

  • 3 tbsp olive oil

  • 1 tbsp soy sauce or tamari

  • 2 tbsp honey

  • 2 garlic cloves finely chopped

  • 1 tbsp fresh ginger finely chopped

  • 1/4 tsp crushed red pepper flakes

Just whisk all ingredients together until smooth. Store in refrigerator.
