Goat Cheese and Pine-Nut Pasta Salad

Ingredients: (yields about 12 servings)
For the dressing:
1 cup olive oil
½ cup light mayo
¼ cup white rice vinegar
2 garlic cloves, minced
2 tsp dijon mustard
1 tsp sugar
1 tsp chopped basil
½ tsp salt
½ tsp black pepper
¼ tsp oregano
Pasta:
1 box Veggie Rotini
1½ cups multi-colored grape tomatoes, sliced
1½ cups fresh baby spinach
½ cup crumbled goat cheese
¼ cup pine nuts
Instructions:
Bring a large pot to a boil and add in dried pasta.
Cook until pasta is tender, about 10 minutes.
Remove from heat and strain. Set pasta aside in a large bowl and allow to cool.
While the pasta is cooling, mix together all of the liquid ingredients for the dressing in a small bowl.
Add the tomatoes, pine nuts, goat cheese, and spinach to the pasta and mix to combine ingredients evenly.
Pour the dressing over the pasta and mix until all of the pasta is coated.
Store in fridge and allow to cool.
