Pesto-Caprese Pasta Salad

This pasta salad is a delicious lunch idea that you can prepare and store in your fridge for over a week! It also serves as a great meal to bring along for a BBQ, picnic, etc!
Ingredients: (yields about 6 servings)
1 box Whole Grain Farfalle or pasta of choice
1 cup fresh basil
3 tablespoons Extra Virgin Olive Oil
2-3 tablespoons Pesto
2 garlic cloves, chopped
1 cup tri-colored grape tomatoes , halved
4 oz. Fresh Mozzarella cheese, finely diced in small cubes
Dash of salt and pepper
Instructions:
Bring large pot of water to a boil over medium-high heat.
Once water is boiling, add pasta and cook until al-dente.
Drain the water and place cooked pasta in a large bowl.
Add in olive oil, pesto, basil, salt, pepper, and chopped garlic and mix until all of the pasta is evenly coated.
Once mixed, add in the grape tomatoes and mozzarella cheese and stir until evenly distributed.
Store in fridge and enjoy!
