Low-Carb Almond Flour Biscuits

Ingredients: (yields 12, 1-inch biscuits) or (6 flattened sandwich patties)

  • 2 cups Blanched Almond Flour

  • 2 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 2 large Eggs (beaten)

  • 1/3 cup Butter (measured solid, then melted) - if using unsalted butter, you might need to add another 1/4 tsp of salt to recipe

  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350 degrees F and lightly spray a large baking sheet with non-stick spray.

  2. Mix dry ingredients together in a large bowl. Stir in wet ingredients.

  3. Scoop tablespoonfuls of the dough onto the lined baking sheet. Form into 12 rounded biscuit shapes. (alternative: can also make 6 flatter, round pancake like biscuits for use as a sandwich bun or burger bun)

  4. Bake for about 15 minutes, until firm and golden. Cool on the baking sheet.

  5. Store in air-tight container for up to 3 days, or freeze for long-term use.
