Mozzarella & Pesto Chicken

Ingredients:

  • 1 pound boneless skinless chicken breasts

  • 1/4 cup Pesto spread

  • 2 oz. Part skim mozzarella cheese

  • 1 large tomato, thinly sliced

  • 1 tsp garlic powder

  • salt and pepper to taste

  • Optional: Balsamic glaze to garnish

Instructions:

  1. Preheat oven to 350 degrees F.

  2. Place chicken breast on cutting board and use meat tenderizer to flatten chicken until thin.

  3. Line large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.

  4. Place chicken breasts on baking sheet and season both sides with garlic powder, salt, and pepper.

  5. Take pesto sauce and coat the top of the chicken breasts until evenly spread.

  6. Take sliced tomato and place evenly on top of chicken.

  7. Cut mozzarella cheese and place evenly on top of the tomato layer.

  8. Place chicken in oven and bake for about 30 minutes or until internal temperature reaches a minimum of 165 degrees F.

  9. Enjoy! Tastes great with balsamic glaze drizzled on top!
