Lemon Blueberry Energy Balls

Ingredients: (yields 24 energy balls)

  • 1 cup old fashioned oats

  • 1 cup sliced almonds

  • 1/4 cup chia seeds

  • 1/4 cup honey

  • 1/2 cup dried blueberries

  • zest and juice of one lemon

Instructions:

  1. In a food processor, process almonds, lemon zest, juice and honey until smooth.

  2. Add in half of the oats and process again until smooth.

  3. Move mixture to a bowl and stir in remaining oats, chia seeds, and blueberries. Stir until combined. Easiest to use your hands!

  4. Roll mixture into about 1 inch balls.

  5. Store in the refrigerator for 1-2 weeks or freeze for up to 6 months.
