Fresh Mediterranean Quinoa

Ingredients: (yields 4 servings)

  • 1 cup tri-colored uncooked quinoa

  • 1 cup Spinach, finely chopped

  • 3/4 cup Cucumber, finely diced

  • 3/4 cup cherry tomatoes, sliced

  • 1/4 cup canned Garbanzo beans, drained

  • 1/4 cup reduced fat Crumbled Feta Cheese

  • 1/4 cup canned and pitted Kalamata olives, drained

  • 1 Tbsp Lemon Juice

  • 1/2 Tbsp Extra virgin olive oil

  • 1 Garlic clove, minced

  • 1 Tbsp Basil, chopped

  • Salt and pepper to taste (optional)

Instructions:

  1. Bring quinoa and 2 cups water to a boil in a medium sauce pan.

  2. Reduce heat to simmer and allow quinoa to cook for about 15 minutes, or until all water is absorbed.

  3. Place quinoa in a large bowl and add in olive oil, lemon juice, and minced garlic. Stir until evenly coated.

  4. Add in cucumber, tomatoes, olives, spinach, basil, and feta cheese. Mix until well combined.

  5. Serve immediately when warm or store in fridge as a cold dish.
