Cold Sesame Zucchini Noodles

These sesame zucchini noodles serve as a great low-carb base for your own asian creation! Add in edamame, tofu, ahi tuna, carrots, etc! The possibilities are endless.
Ingredients: (yields 4 servings)
3 medium zucchini
2 garlic cloves, finely chopped
¼ cup packed fresh cilantro
3 Tbsp Rice Vinegar
1 Tbsp Toasted Sesame Oil
2 tsp crushed red pepper
2 tsp sugar
½ tsp salt
¼ cup sliced almonds (optional)
Instructions:
With zucchini noodle spiralizer, take zucchini and shred into zucchini noodles
In a large bowl, mix together the garlic, rice vinegar, cilantro, crushed red pepper, sesame oil, sugar, and salt until all ingredients are finely combined.
Add zucchini to the liquid mixture and stir until evenly combined and lathered.
Sprinkle sliced almonds on top for an extra crunch!
Enjoy! Store in fridge for up to 3 days.
