Jordi's Lite Chicken & Cheese Quesadilla

Ingredients:

- 2 oz. shredded chicken breast

- 1 Toufayan low carb, high fiber tortilla

- ¼ cup fat free refried beans

- ¼ cup chopped red peppers

- 1 oz. shredded fat free cheese

- 1 tbsp Salsa

- 1 tbsp Fat-Free Sour Cream

Instructions:

  1. Shred cooked chicken breast and set aside.
  2. Take refried beans and place in small bowl in microwave for 1 minute.
  3. Place tortilla in greased pan on stove over medium heat.
  4. Add shredded cheese to one side of tortilla. 
  5. After cheese is slightly melted, add in chicken, beans, and peppers.
  6. Fold tortilla in half and keep flipping the tortilla until each side is golden brown.
  7. Garnish with sour cream and salsa and enjoy!
