Jordi's Lite Chicken & Cheese Quesadilla

Ingredients:
- 2 oz. shredded chicken breast
- 1 Toufayan low carb, high fiber tortilla
- ¼ cup fat free refried beans
- ¼ cup chopped red peppers
- 1 oz. shredded fat free cheese
- 1 tbsp Salsa
- 1 tbsp Fat-Free Sour Cream
Instructions:
- Shred cooked chicken breast and set aside.
- Take refried beans and place in small bowl in microwave for 1 minute.
- Place tortilla in greased pan on stove over medium heat.
- Add shredded cheese to one side of tortilla.
- After cheese is slightly melted, add in chicken, beans, and peppers.
- Fold tortilla in half and keep flipping the tortilla until each side is golden brown.
- Garnish with sour cream and salsa and enjoy!
