Toasted Pine Nut Spinach Salad

This is one of the easiest recipes and it also happens to be one of my favorites. This salad is loaded with iron, fiber, and Vitamin A.

Ingredients: 

  • 6 cups baby spinach

  • 1/4 cup olive oil

  • 1/4 cup Italian pine nuts

  • 6 cloves garlic- finely minced

  • 2 tbsp Ocean Spray 50% lower sugar Craisens

  • 1 oz. grated parmesan cheese

Instructions: (this will make about 3-4 servings of dressing)

  1. In a small sauce pan bring 1/4 cup olive oil to medium heat (or enough to cover whole bottom of pan).

  2. Once heated, add in minced garlic and pine nuts.

  3. Stir occasionally until pine nuts are LIGHTLY toasted. You need to be careful as the pine nuts toast easily. It should only take about 5-6 minutes.

  4. Remove mixture from heat and pour into small bowl.

  5. Let cool for about 10-15 minutes so the spinach doesn't completely congeal when you pour it on top.

  6. Pour the cooled dressing on top of spinach.

  7. Sprinkle on the parmesan cheese and craisens and enjoy!

  8. Optional- you can add a protein to this salad of course if you prefer, I actually like to eat it as is, but it is up to you.

  9. Refrigerate leftover dressing.
