Delish and Easy Chicken Fajitas

Ingredients: yields 3 servings

Skillet ingredients:

  • 1 lb. Boneless Skinless Chicken Breast

  • 1 Red Bell Pepper, sliced

  • 1 Green Bell Pepper, sliced

  • 1 Yellow Bell Pepper, sliced

  • 1 Yellow Onion, sliced

  • 1 packet McCormick lower sodium Fajita Seasoning Mix

  • 1 Tbsp Olive Oil

For the toppings: (3 servings)

  • 1 cup Black Beans

  • 1 cup shredded Mexican Lettuce

  • 1/4 cup Fat-free Sour cream

  • 1/4 cup salsa

  • 1/4 cup Reduced Fat shredded Mexican cheese

  • Optional: Any low carb or whole wheat wrap of choice (I enjoy eating as a fajita bowl without a wrap!)

Instructions:

  1. Take chicken breasts and slice into thin 1-inch strips.

  2. Place skillet over medium heat on the stovetop and coat pan with half of the olive oil.

  3. Place chicken on skillet and cook for about 12-15 minutes, or until chicken is fully cooked through and slightly browned, with a minimum temperature of 165 F.

  4. Remove chicken from skillet and set aside.

  5. Clean the skillet and place the remaining olive oil over medium heat and add in the bell peppers and onions. Cook until peppers are soft and flexible.

  6. Add the chicken back into the skillet with the peppers.

  7. Add in 3/4 cup water to the skillet and then pour fajita spice contents in.

  8. Bring to a boil and then reduce heat. Stir well and let simmer for about 5-8 minutes or until all liquid is absorbed.

  9. Enjoy fajitas with the toppings and a side of black beans, either as a wrap or just as a fajita salad!
