Spinach & Feta Chicken Burger with Tzatziki Sauce
Ingredients: Chicken Burger (makes one patty)
4 oz. Lean Ground Chicken Breast
¼ cup Baby Spinach, chopped
1 oz. Fat-free or Reduced-fat crumbled Feta Cheese
1 tsp. Oregano
1 tsp. Onion Powder
1 tsp. Garlic Powder
Dash of salt and pepper
Ingredients: Tzatziki Sauce (makes about 2 servings)
1 cup nonfat Plain Greek Yogurt
1 cucumber, diced
1 tomato, diced
2 Tbsp Fresh Dill
1 tsp. Fresh Lemon Juice
Dash of pepper
Instructions for Chicken Burger:
In a medium bowl, add in chopped spinach, feta cheese, spices, and ground chicken.
Mix ingredients together until well combined. (easiest to use your hands to combine all ingredients)
Shape into a burger patty.
Heat skillet over medium-high heat and coat with olive oil.
Place burger on skillet, and grill for about 12-13 minutes, until both sides are slightly brown.
Top with any veggies you like! (sliced onion, tomato, red pepper, lettuce)

Instructions for Tzatziki Sauce:
Dice cucumber and tomato into finely diced cubes. Pat with paper towel to remove excess water.
In a small bowl, add in the greek yogurt, tomato, cucumber, dill, lemon juice, and pepper and stir until well combined.
Set aside and store in fridge.
