Spinach & Feta Chicken Burger with Tzatziki Sauce

Ingredients: Chicken Burger (makes one patty)

  • 4 oz. Lean Ground Chicken Breast

  • ¼ cup Baby Spinach, chopped

  • 1 oz. Fat-free or Reduced-fat crumbled Feta Cheese

  • 1 tsp. Oregano

  • 1 tsp. Onion Powder

  • 1 tsp. Garlic Powder

  • Dash of salt and pepper

Ingredients: Tzatziki Sauce (makes about 2 servings)

  • 1 cup nonfat Plain Greek Yogurt

  • 1 cucumber, diced

  • 1 tomato, diced

  • 2 Tbsp Fresh Dill

  • 1 tsp. Fresh Lemon Juice

  • Dash of pepper

Instructions for Chicken Burger:

  1. In a medium bowl, add in chopped spinach, feta cheese, spices, and ground chicken.

  2. Mix ingredients together until well combined. (easiest to use your hands to combine all ingredients)

  3. Shape into a burger patty.

  4. Heat skillet over medium-high heat and coat with olive oil.

  5. Place burger on skillet, and grill for about 12-13 minutes, until both sides are slightly brown.

  6. Top with any veggies you like! (sliced onion, tomato, red pepper, lettuce)

  7. Enjoy!

Instructions for Tzatziki Sauce:

  1. Dice cucumber and tomato into finely diced cubes. Pat with paper towel to remove excess water.

  2. In a small bowl, add in the greek yogurt, tomato, cucumber, dill, lemon juice, and pepper and stir until well combined.

  3. Set aside and store in fridge.
