Sunrise Power Bowl

Ingredients:
1 cup cooked Tri-Color Quinoa
1/2 cup canned Low Sodium Black Beans
2 Eggs
1/2 Avocado
1 cup grape tomatoes (sliced in halves)
2 tablespoons Cilantro
1 teaspoon extra virgin olive oil
dash of salter and pepper
Instructions:
Bring two cups of water to a boil over medium-high heat.
Once water is boiling, add in 1/2 cup dry quinoa with 1 tsp olive oil and dash of salt.
Reduce the heat to medium-low and cover with lid. Let quinoa simmer for about 20 minutes or until all water is absorbed. Then set aside.
Place a pan over stove on medium heat and spray with olive oil cooking spray or tsp of light olive oil. Crack two eggs (sunny side up style). Cook until white of egg is cooked but yolk is still runny. Set aside.
Place 1/2 cup black beans in a small bowl and cover with paper towel. Place in microwave for one minute.
Cut avocado in slices and cut grape tomatoes into halves.
Take a medium bowl and add the quinoa, black beans, tomatoes.
Place the two fried eggs on top.
Garnish with cilantro and dash of salt and pepper.
