Egg-White Mediterranean Omelet

Egg-White Mediterranean Omelet

Ingredients:

1.     1 cup Egg-whites

2.     ½ cup Raw Spinach

3.     ¼ cup diced tomato

4.     ¼ cup diced onion

5.     1 oz. feta cheese

6.     Dash of salt and pepper

 Instructions:

1.     Spray small non-stick pan with Olive Oil cooking spray.

2.     Pour cup of egg whites into pan and cook on medium heat.

3.     Once egg white is able to flip (like how you would flip a pancake) use spatula to flip to the other side.

4.     On cooked side up, add the vegetables and sprinkle on the feta.

5.     After about 2 minutes, fold omelet in half.

6.     Continue flipping back and forth until each side is lightly brown.

7.     Add a dash of salt and pepper on top and enjoy!

8.     Paired great with a slice of multi-grain toast or some fresh fruit.
