Classic Chocolate Chip Muffins

Ingredients: (yields 12 muffins)

  • 2 cups All-purpose flour

  • 1 1/4 cup white granulated sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1/3 cup Canola oil

  • 1/2 cup water

  • 2 teaspoons vanilla extract

  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 350°F.

  2. Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.

  3. Add the eggs, oil, vanilla, and water. Mix until well combined, but be careful to not over-mix.

  4. Using a spatula, stir in chocolate chips until evenly distributed.

  5. Using a ladle, pour the batter into paper-lined muffin pan cups.

  6. Bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.

  7. Remove and cool for 5 minutes before moving to a cooling rack.
