Classic Chocolate Chip Muffins
Ingredients: (yields 12 muffins)
2 cups All-purpose flour
1 1/4 cup white granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1/3 cup Canola oil
1/2 cup water
2 teaspoons vanilla extract
1/2 cup chocolate chips
Instructions:
Preheat oven to 350°F.
Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.
Add the eggs, oil, vanilla, and water. Mix until well combined, but be careful to not over-mix.
Using a spatula, stir in chocolate chips until evenly distributed.
Using a ladle, pour the batter into paper-lined muffin pan cups.
Bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
Remove and cool for 5 minutes before moving to a cooling rack.
