Pistachio Snack Squares

Ingredients: (yields 12 squares)

  • 1 cup raw, shelled pistachios (plus more for topping)

  • 1 cup rolled oats (or gluten free oats)

  • 1/4 cup maple syrup

  • 1/4 cup unsweetened coconut flakes

  • 2 Tablespoons olive oil

  • 1/2 teaspoon salt

    (feel free to add in Craisins, almonds, and other toppings of choice!)

Instructions:

  1. Preheat oven to 350 degrees F and line an 8-inch square pan with parchment paper.

  2. In a food processor, process the pistachios, oats, and salt for about 30 seconds, until a meal starts to form. Slowly drizzle in the maple syrup and olive oil while the motor is still running and the mixture begins to come together into a crumbly, almost-wet dough. (if you do not have a food processor, you can crush the pistachios and oats with a meat tenderizer in a Ziploc bag and then mix all ingredients together in a mixing bowl)

  3. Press the dough evenly into the pan and cover it with coconut flakes and remaining pistachios. Bake for 10 to 12 minutes until the coconut turns just golden brown and the dough is cooked through. You want the squares to still be a little soft, be careful to not overcook!

  4. Carefully lift the cooled dough out of the pan by holding two sides of the parchment paper. Cut it into squares. Store the squares in a sealed container for up to a week.
