Whole-Wheat Chocolatey Chip Walnut Cookies
Since these cookies are baked using whole-wheat flour instead of all-purpose, they contain more vitamins, minerals, and fiber. They also have the most desirable texture - being crunchy on the outside and chewy in the center. This is a healthy alternative to a regular cookie, and you won’t even be able to taste the difference!
Ingredients: (yields about 36 cookies)
2 cups Whole-Wheat flour
3/4 cup granulated sugar
3/4 cup packed brown sugar
3/4 cup unsalted butter, softened
1/4 cup almond milk
1 teaspoon vanilla extract (I did 1/2 tsp vanilla and 1/2 tsp almond extract for a nuttier taste)
1 large egg
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup chocolate chips
1/2 cup chopped walnuts
Instructions:
Preheat oven to 375 degrees F and spray a cookie sheet with non-stick cooking spray.
In a medium bowl, whisk together whole wheat flour. baking soda and salt.
In another large bowl, mix the butter, sugars, vanilla, milk, and egg until combined. Stir in the flour mixture. Once evenly combined, fold in the chocolate chips and walnuts.
Drop dough onto cookie sheet using a rounded tablespoon. Place cookies 2 inches apart as they will spread.
Bake 10-12 minutes and cool on cooling rack. Centers will be really soft when first removed. (You can cook for an extra 5-6 minutes for a crunchier cookie consistency)
Store in air-tight container up to 5 days.
