Green Goddess Turkey Burger
Ingredients: (yields 4 servings)
Green Goddess Aioli: (yields about 3/4 cup)
1/4 cup fat-free sour cream
6 tablespoons ripe avocado
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh basil leaves
2 tablespoons light mayonnaise
1 teaspoon fresh lemon juice
1 garlic clove, chopped
1/4 tsp salt
To prepare Aioli, blend all ingredients in a food processor or blender until smooth and creamy.
Turkey burgers:
1 pound ground turkey (I prefer to use regular ground turkey, as opposed to ground turkey breast, as the burger will be much juicier and tastier!)
1 large egg
2 garlic cloves, minced
2 Tbsp Parsley, chopped
1/4 tsp salt
1/4 tsp pepper
1 Tbsp Extra Virgin Olive Oil
4 slices reduced fat Gouda cheese
Baby arugula
Sliced tomato
Sliced red onion
4 Whole Wheat Buns (or gluten free buns)
Instructions:
In a large bowl, mix together ground turkey, egg, garlic, and parsley, then season with salt and pepper. Form mixture into four flat patties.
In a medium skillet over medium heat, heat olive oil. Add patties and cook until golden and cooked through, 5 minutes per side, or until a minimum internal temperature of 165F.
Add slice of gouda cheese to each burger and remove from skillet once slightly melted.
Serve on a toasted whole wheat bun with baby arugula, tomato, onion, and 1 Tbsp Green Goddess Aioli.
