Italian Chicken Meatballs

Ingredients: (yields 4 servings)

  • 1 pound Ground Chicken

  • 1 large egg

  • 1/4 cup Italian Bread crumbs (or you can create breadcrumbs with bran cereal and Italian seasonings for added fiber!)

  • 2 Tbsp fresh Parsley, chopped

  • 2 Tbsp shredded Parmesan

  • 2 Tbsp Yellow onion, diced

  • 1/2 tsp garlic powder

  • salt and pepper, to taste

Instructions:

  1. Preheat oven to 400 degrees F.

  2. Lightly coat large baking sheet with non-stick olive oil spray.

  3. In a medium bowl, mix all ingredients until well combined (easiest to use your hands!)

  4. Shape mixture into about 24 meatballs. (approximately 1 tablespoon each)

  5. Bake for 20-24 minutes or until minimum internal temperature reaches 165 F. Meatballs should be slightly browned on the outside.

  6. Enjoy over a high fiber pasta, zucchini noodles, spaghetti squash, etc! Tastes great with tomato or vodka sauce!
