Italian Chicken Meatballs

Ingredients: (yields 4 servings)
- 1 pound Ground Chicken 
- 1 large egg 
- 1/4 cup Italian Bread crumbs (or you can create breadcrumbs with bran cereal and Italian seasonings for added fiber!) 
- 2 Tbsp fresh Parsley, chopped 
- 2 Tbsp shredded Parmesan 
- 2 Tbsp Yellow onion, diced 
- 1/2 tsp garlic powder 
- salt and pepper, to taste 
Instructions:
- Preheat oven to 400 degrees F. 
- Lightly coat large baking sheet with non-stick olive oil spray. 
- In a medium bowl, mix all ingredients until well combined (easiest to use your hands!) 
- Shape mixture into about 24 meatballs. (approximately 1 tablespoon each) 
- Bake for 20-24 minutes or until minimum internal temperature reaches 165 F. Meatballs should be slightly browned on the outside. 
- Enjoy over a high fiber pasta, zucchini noodles, spaghetti squash, etc! Tastes great with tomato or vodka sauce!
