Blueberry Flax Seed Muffins
Ingredients: (yields 12 regular size muffins)
1 cup whole wheat flour
2/3 cup rolled oats
1/2 cup flax seeds
2/3 cup light brown sugar, packed
1 cup almond milk
1/3 cup canola oil or coconut oil
1 large egg
1 cup blueberries
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp vanilla extract
Instructions:
Preheat oven to 350F. Line muffin tin with 12 liners or spray with non-stick spray.
In a large bowl, stir together all the dry ingredients.
Make a well in the center, and pour in the milk, oil, egg, and vanilla extract. Mix with dry ingredients until just combined. Do not over-stir.
Stir in the blueberries last.
Divide batter into molds, filling 1/2 full.
Bake muffins for 17-22 minutes or until toothpick inserted in the center comes out clean.
