Blueberry Flax Seed Muffins

Ingredients: (yields 12 regular size muffins)

  • 1 cup whole wheat flour

  • 2/3 cup rolled oats

  • 1/2 cup flax seeds

  • 2/3 cup light brown sugar, packed

  • 1 cup almond milk

  • 1/3 cup canola oil or coconut oil

  • 1 large egg

  • 1 cup blueberries

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350F. Line muffin tin with 12 liners or spray with non-stick spray.

  2. In a large bowl, stir together all the dry ingredients.

  3. Make a well in the center, and pour in the milk, oil, egg, and vanilla extract. Mix with dry ingredients until just combined. Do not over-stir.

  4. Stir in the blueberries last.

  5. Divide batter into molds, filling 1/2 full.

  6. Bake muffins for 17-22 minutes or until toothpick inserted in the center comes out clean.
