Jordi's Heart Healthy Oatmeal Cookies
Ingredients: (yields 20 cookies)
1 1/4 cup quick oats or old fashioned oats
1 cup whole-wheat flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1/4 cup unsweetened apple sauce
4 Tbsp coconut oil (can replace with 4 Tbsp unsalted butter, melted and cooled)
1 large egg
1/2 cup honey
1 tsp pure vanilla extract
1/3 cup dark chocolate chips
Optional: walnuts and raisins
Instructions:
In a large bowl, whisk together the oats, flour, salt, cinnamon and baking powder.
in another medium bowl, whisk together the oil, applesauce, egg, vanilla, and honey until well combined.
Combine the wet ingredients with the dry and stir together until combined.
Fold in the chocolate chips or mixings of choice. (raisins, walnuts, pecans, etc.) The dough should be sticky and wet.
Place batter in the fridge for 30 minutes and cover.
While batter is cooling, preheat oven to 350F.
Take a large baking sheet and spray with non-stick spray or line with parchment paper.
With a spoon, drop dough onto baking sheet in 1 1/2 inch balls. Press them down to flatten as these do not flatten on their own while baking.
Let bake for 9-10 minutes and allow to cool on cooling rack for 2 minutes.
Store in airtight container for up to 3 days. You can freeze leftover cookies to increase freshness up to 3 months.
