Sweet Cranberry-Walnut Bread

This bread is the perfect treat for when you are craving something sweet. It is made with truvia, an all natural sugar alternative, as opposed to regular table sugar. Also, this recipe uses shredded zucchini to create a perfect, moist texture. (Don't worry, you don't taste the zucchini, it just affects the consistency.)

Ingredients:

- 3 cups King Arthur Whole Grain, Whole Wheat Flour

- 1 1/2 cups Truvia Sweetener 

- 2 1/2 teaspoons ground cinnamon

- 1 1/4 teaspoons salt

- 1 teaspoon baking soda

- 1/2 teaspoon baking powder

- 1/4 teaspoon ground nutmeg

- 3 largs eggs

- 1 1/2 cups shredded zucchini (first peel the zucchini, then use a cheese grater to make the mash) 

- 1 cup coconut oil

- 1 tablespoon vanilla extract

- 1 cup Dried Reduced Sugar, Ocean Spray Craisins 

- 1/2 cup chopped walnuts

 

Instructions:

1. In a large bowl, combine all the dry ingredients together. 

2. In another large bowl, beat the eggs, then add in the zucchini, oil, and vanilla.

3. Add the liquid ingredients to the dry ingredients and whisk together until blended.

4. Fold in the cranberries and walnuts until evenly mixed.

5. Pour batter into two 8in. x 4in. loaf pans. 

6. Bake on 350F for 60-65 minutes or until a toothpick comes out clean.
