Skinny Sweet Potato Pie
This simple recipe uses a small twist on a classic sweet potato to give you a real sweet treat!
Ingredients:
· 2 cups cooked sweet potato, mashed
· 4 egg whites, beaten
· 1tsp pure vanilla extract
· 2tsp apple pie spice
- Dash of Cinnamon to sprinkle on top (optional)
Instructions:
1. Preheat oven to 350F.
2. In a bowl, stir together the sweet potatoes and 1/3 of the beaten egg whites until fully combined.
3. Then fold in another 1/3 until combined, and finally do the same for the last 1/3 of the egg whites.
4. Evenly pour the mixture into small ramekin dishes and place into oven.
5. Bake for 30 minutes. They should be slightly firm to the touch when ready.
6. Serve immediately.
