Pumpkin Spice Muffins
A delicious, but healthy pumpkin spice muffin recipe to get in the spirit this fall.
Ingredients:
· 1 ¾ cup whole wheat flour
· 1/3 cup old-fashioned oats
· 1/3 cup coconut oil for baking
· ½ cup honey
· 2 large eggs
· 1 cup pumpkin puree
· ¼ cup Almond Milk
· 1 tsp baking soda
· 2 tsp vanilla extract
· ½ tsp salt
· 1 tsp cinnamon
· ¼ tsp nutmeg
· ¼ teaspoon cloves
· Optional: white chocolate chips, chopped nuts or dark chocolate chips**
Instructions:
1. Preheat oven to 325F and grease a muffin tin pan. (makes about 10)
2. In a large bowl, beat together the oil, honey and eggs. Then mix in the pumpkin puree and almond milk, then the baking soda, vanilla extract, cinnamon, salt, nutmeg and cloves.
3. Add the flour and oats and mix together until combined.
4. Add in any mix ins you would like! (chocolate chips, nuts, etc.)
5. Fill muffin cups to about ¾ filled.
6. Bake for about 25 minutes or until a toothpick inserted comes out clean.
7. Let the muffins cool before removing them from the tin.
8. Enjoy!
