Skinny Mozz Sticks

Ingredients: (yields 6 servings)

  • 6 skim mozzarella sticks

  • 6 high fiber crackers (GG crackers, High-Fiber Fiberrich Crackers, or any High-Fiber bran cracker)

  • 3 large eggs

  • ¼ cup shredded Parmesan cheese

  • 1 tbsp Parsley flakes

  • 1 tbsp Oregano

  • 1 tbsp Garlic powder

  • Rao’s Organic Marinara (for dipping)

Instructions:

  1. Take mozzarella sticks and cut them in half so there are 12 mini sticks. Then freeze until frozen solid. (about 2-3 hours)

  2. When ready to bread, take high fiber crackers and place them in Ziploc bag. Take meat tenderizer (or you can use your hands) and break them completely apart until they are similar to the consistency of breadcrumbs.

  3. Place cracker “breadcrumbs” in a medium bowl and add in the Parmesan cheese, parsley flakes, oregano, and garlic powder. Mix together evenly.

  4. In another small bowl, whisk together the 3 eggs.

  5. Take the frozen mozzarella sticks and first dip in egg, and then dip into the breadcrumb bowl and flip them around until they are evenly coated. Continue until they are all complete.

  6. Place coated sticks in freezer for about 30-45 minutes.

  7. Once frozen, heat oven to 400 degrees F.

  8. Bake for 10-12 minutes or until golden brown.

  9. Serve with warmed marinara sauce.
