Cauliflower Tater-Tots

Ingredients: (makes about 45 tots)

  • 2 cups cauliflower florets

  • 1 large egg

  • 1/4 cup chopped red bell pepper

  • 1/8 cup grated parmesan cheese

  • 1/4 cup reduced fat mozzarella cheese

  • 1/4 cup organic panko crumbs or gluten free panko crumbs

  • 1/4 chopped cilantro

  • salt and pepper to taste

Instructions:

  1. Preheat oven to 375° and spray a baking sheet with non-stick cooking spray.

  2. Steam cauliflower until fork-tender. Once the cauliflower is steamed, pulse in a food processor until coarsely grated, about 5 pulses. If you don't have food processor, you can use a blender.

  3. Combine all of the ingredients, and stir together in a large mixing bowl.

  4. Shape tots into desired shape (small circles or ovals) and place onto baking sheet.

  5. Bake tots for 10 minutes, then flip them to other side and bake for another 10 minutes, or until golden brown.
