Crispy Parmesan Zucchini Fries
When your craving French Fries with one of your meals, substitute them with this easy Zucchini French Fry recipe! These take less than 20 minutes to make and taste delicious too!
Ingredients: (2 servings)
- 2 large zucchini’s
- 2 extra large eggs
- 1 cup almond flour
- ½ cup Ian’s Panko Crumbs
- 1/3 cup grated parmesan cheese
- 1 tbsp garlic powder
- 1 tsp ground pepper
- dash of cayenne pepper
Instructions:
1. Preheat oven to 425F.
2. Spray a baking sheet with non-stick cooking spray.
3. Cut zucchini into skinny rectangles. Try to make them all pretty similar in size so they cook evenly.
4. In one small bowl, beat together the eggs.
5. In another small bowl, mix together the flour, panko, cheese and spices.
6. Dip the zucchini into the egg and then into the dry ingredients bowl until zucchini is evenly coated.
7. Place onto baking sheet.
8. Bake for 15 minutes or until fries are golden brown.
9. Serve with a marinara sauce or tzatziki sauce!
