Honey Chipotle Vinaigrette

Ingredients: (yields about 12 servings - 24 Tbsp)

·         6 Tbsp red wine vinegar

·         ¼ cup honey

·         ¾ cup olive oil

·         ½ tsp. dried oregano

·         1 ½ tsp. salt

·         ½ tsp ground black pepper

·         2 chipotle peppers in adobo sauce

·         2 small garlic cloves, roughly chopped

Instructions:

1.       Combine all ingredients together in a blender or food processor until smooth. Taste and adjust seasoning if necessary.

2.       Drizzle on top of salad and enjoy!

3.       Store in fridge in air tight container.
