Light Chicken Caesar Salad
Ingredients: (yields one salad)
Boneless Chicken Breast
1 head Romaine lettuce
1 large egg, whisked
½ cup Fiber one Original Bran Cereal, crushed
1 Tbsp Olive Oil
2 Tbsp Croutons
2 Tbsp Ocean Spray Lower Sugar Craisins
2 Tbsp Bolthouse Yogurt Caesar Dressing
1 oz. Grated Parmesan Cheese
½ tsp garlic powder
½ tsp italian seasoning
Dash of salt and pepper
Instructions:
Preheat oven to 375 degrees.
Pound chicken breast with meat tenderizer until thin.
In a medium bowl, mix together the fiber one crumbs with the Italian seasoning, garlic, salt, and pepper.
In another small bowl, whisk together the egg.
Dip the chicken breast in the egg wash, then coat in the bread crumbs.
In a skillet over medium heat, pour the olive oil in the pan and pan fry chicken lightly until both sides are lightly brown.
Place chicken in the oven on a baking sheet and cook for 30 minutes, or until chicken is thoroughly cooked.
While the chicken is cooking, chop the romaine lettuce and place into a large bowl.
Add in the Parmesan, craisins, and croutons.
Once chicken is cooked and slightly cooled, chop into small cubes and toss in salad.
Add in the dressing and mix everything together until contents are evenly coated.
Top with pepper as desired and enjoy!
