Easy Quinoa Salad
Ingredients: (yields about 6 servings)
3 Individual Packages of Organic Easy Minute Quinoa (or 3 cups cooked quinoa of choice)
1 cup Raw Baby Spinach
¼ cup Rice Vinegar
¼ cup Extra Virgin Olive Oil
½ cup Black Beans
½ cup Roasted Corn
¼ cup red onion - diced
1 small tomato - diced
2 Tbsp Jalapeno Pepper - diced
1 Tbsp Fresh Cilantro
1 Tbsp Lime Juice
Dash of cumin, garlic powder, and salt
Instructions:
Take each minute quinoa container at a time and microwave for one minute.
Place all quinoa in a large bowl.
Pour in the rice vinegar, olive oil, and lime juice and stir until combined.
Add in the rest of the ingredients and mix until all ingredients are evenly combined.
Chill in fridge before serving.
Store in fridge for up to a week!
