Delicious Cauliflower Crust Pizza
This cauliflower pizza crust recipe is easy to make and tastes so good you won't even believe how few calories are in it. You can dress up the crust in any way you like with all your favorite toppings! I make mine with pesto, sun dried tomatoes, goat cheese, olives and mushrooms. Feel free to get creative! And a good source of fiber!
Ingredients: (makes about 2 servings)
- 2 cauliflower heads
- 1 egg
- 1/3 cup goat cheese
- 1/3 cup sun dried tomatoes
- 4 tbsps Pesto
- 1 tbsp oregano
- 1 tbsp garlic powder
- 1 tsp ground pepper
(any veggie toppings of choice)
Instructions:
1. Preheat oven to 400F.
2. Coat baking sheet or pizza sheet with non-stick cooking spray.
3. First, you need to make the cauliflower rice. You can either pulse the florets in a food processor or blender, or you can grate it with a cheese grater. I prefer the latter because it takes a lot faster.
4. Fill a large pot with about an inch of water and bring to boil. Once the water is boiling, add the cauliflower mash to it. Cover the pot and let cook for 5 minutes.
5. Drain cauliflower in a fine mesh strainer.
6. Next, you are going to take your cauliflower mash and lay it in a clean dish towel. You need to squeeze the dish towel until all excess water is squeezed out. This prevents the crust from being too moist and making sure you are left with a dry, crunchy consistency.
7. After that, in a large bowl, mix together the cauliflower mash, 1/3 cup of goat cheese, and one beaten egg and all the spices until everything is evenly distributed.
8. Take your greased pan and form your crust. You can make into a square of circle, whichever you prefer, but make sure the crust is about 1/3 inch thick. It is going to flatten out when you bake it.
7. Bake on 400F for 40-45 minutes or until golden brown.
8. Let cool and then add the pesto and sun dried tomatoes. Then any veggies of your choice!
