Instructions:
Take iceberg lettuce wedge and separate to make shells.
Finely dice onion and tomato and place all topping ingredients into small separate dishes.
Season beef in a large bowl with diced onion, taco bell seasoning, cumin and a dash of cayenne pepper.
Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
Heat a medium sized pan over medium heat with cauliflower rice and 1 tbsp. of olive oil. Add in cilantro and cover pan with lid to allow rice to become more tender. Cook for 5-6 minutes and stir occasionally.
Take lettuce cups and add in meat, rice, and all toppings. (however much you like)
Or, stir it all together and make a big taco salad!
** If you are looking for a more high-carb meal, replace lettuce cups for Toufayan high-fiber wraps and replace cauliflower rice for brown rice or quinoa. Also, you can use ground turkey, or chicken if you prefer that over ground beef.
