Taco Tuesday: The Slim Way

If you're looking for a low carb meal, this is a great way to eat clean, but still satisfy your appetite. This entire meal contains only 17g of carbs and 6 grams of fiber. With this alternative, you don't have to give up your favorite Mexican meal.

Ingredients: 

- 4-6 oz. lean ground beef

- 1 cup cauliflower rice- pre made (Green giant, or Trader Joes Brand, etc.) 

- 1/4 cup red onions

- 1/4 cup diced tomato

- 1 /4 cup red pepper

- 1/4 cup Mexican shredded low fat cheese

- 1/4 cup plain greek yogurt

- 1/4 cup salsa of choice

- 1/4 avocado

- 2 tbsp. Taco Bell brand taco meat seasoning

- cilantro

- cumin

- cayenne pepper

- iceberg lettuce (to make lettuce wraps)

 

Instructions: 

  1. Take iceberg lettuce wedge and separate to make shells.

  2. Finely dice onion and tomato and place all topping ingredients into small separate dishes.

  3. Season beef in a large bowl with diced onion, taco bell seasoning, cumin and a dash of cayenne pepper.

  4. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.

  5. Heat a medium sized pan over medium heat with cauliflower rice and 1 tbsp. of olive oil. Add in cilantro and cover pan with lid to allow rice to become more tender. Cook for 5-6 minutes and stir occasionally.

  6. Take lettuce cups and add in meat, rice, and all toppings. (however much you like)

  7. Or, stir it all together and make a big taco salad!

** If you are looking for a more high-carb meal, replace lettuce cups for Toufayan high-fiber wraps and replace cauliflower rice for brown rice or quinoa. Also, you can use ground turkey, or chicken if you prefer that over ground beef.
