Classic Chicken Chop-Chop w/ Mustard Curry Sauce

Ingredients:
· 4 oz. chicken breast
· ¾ cup black beans
· 1 medium red tomato
· ½ shredded Mexican lettuce
· 1/3 cup no salt added corn
· ¼ cup white onions
· ½ Toufayan Low-Carb High Fiber Pita
· 2 tbsp light mayonnaise
· 2 tbsp yellow mustard
· 1 tsp curry powder
· Garlic powder
· Onion Powder
· Pepper
Instructions:
1. First, we are going to make the mustard-curry sauce! Mix together the 2tbsp’s of light mayo and the 2tbsp of mustard in a small dish. Once that is mixed, add in the curry powder and mix together. Add in mayo or mustard to adjust mix if the color doesn’t look like a light yellow. Set aside.
2. Season chicken breast with garlic powder, onion powder and pepper.
3. Cut chicken into small pieces. Set aside.
4. Dice onions to cook with the chicken.
5. Finely dice tomato.
6. Heat stove top to medium heat and coat pan with extra virgin olive oil. Cook chicken with onions until chicken is fully cooked through.
7. Cook black beans in small sauce pan on medium heat for about 10 -12 minutes.
8. Dress plate with the black beans, chicken & onions, tomato, corn and shredded lettuce.
9. Enjoy with the mustard curry sauce and the half of the pita. You can warm pita in the microwave or toaster if you prefer!
