Chipotle Without The Bloat

“Healthy” Style Chipotle – All the delicious flavor of Chipotle, but without the after bloat!!

Ingredients:

·         4 oz. Boneless Skinless Chicken Breast

·         ½ cup No Salt Added Canned Corn

·         1/3 cup Diced tomato and green chili peppers

·         ¾ cup Black Beans

·         ¼ cup diced onions

·         ¼ Avocado

·         ½ cup mushrooms

·         1 oz. Reduced Fat Mexican Blend Cheese

·         2T Salsa of choice

·         2T Low fat Sour cream

·         Garden of Eaten No salt added blue corn chips

·         Cayenne Powder

·         Garlic & Onion Powder

·         Cilantro

·         Pepper

·         Hot sauce (optional)

Instructions:

1.       Season chicken breast with cayenne pepper, garlic & onion powder and pepper.

2.       Cut chicken into small cubes.

3.       Dice tomatoes, mushrooms, chili peppers and onions.

4.       In one pan coated with olive oil, mix together mushrooms, peppers, onions and corn. Sprinkle ½T of cilantro on top. Grill on medium heat until veggies are just a tad bronzed.

5.       Grill seasoned chicken in separate pan on medium heat with olive oil for about 10 minutes or until fully cooked. (add in hot sauce if you like)

6.       Cook black beans in small pot on stove for about 10 minutes on medium heat.

7.       On a large plate, add the black beans, veggies and chicken.

8.       Top it with 1 oz. Mexican blend cheese, the salsa, sour cream and avocado.

9.       Crack up about 4 of the chips and blend in for an extra crunch.

10.   Mix it all together and enjoy!!
