Dark Chocolate Oatmeal Flaxseed Muffins

Need a quick breakfast on the go? These muffins have the perfect arrangement of macro-nutrients to get you started for your day! Bake these up and give yourself a quick grab & go breakfast for the week. I've made mine with dark chocolate chips, however you can add in whichever ingredient you prefer! blueberries, banana, nuts, etc.

Ingredients:

·         1 cup of whole wheat flour

·         ½ cup of ground flax meal

·         ½ cup rolled oats

·         1/3 cup of brown sugar (packed)

·         1 teaspoon of espresso powder

·         1 teaspoon of baking powder

·         1 teaspoon of baking soda

·         1 teaspoon vanilla extract

·         ½ teaspoon salt

·         1 large egg

·         ¼ cup of oil

·         1 cup of almond milk

·         ½ cup dark chocolate chips (substitute for blueberries if you like!)

 

Instructions:

1.       Preheat oven to 350F and spray a muffin tin with olive oil spray or line it with baking cups.

2.       In a large mixing bowl, stir together all the dry ingredients.

3.       Make a well in the center of the dry ingredients and add the egg, oil, and milk.

4.       Mix until all ingredients are evenly combined, then stir in the dark chocolate chips (or blueberries)

5.       Pour batter into muffin cups, filling them about ¾ full because they will rise.

6.       Garnish the top of the muffins with extra oats or additional chocolate chips.

7.       Bake for 16-20 minutes.

8.       Enjoy!
