Mediterranean Lemon Dressing

Ingredients: (yields 4 servings)

  • 1/4 cup extra-virgin Olive oil

  • 2 Tablespoons lemon juice

  • 1 1/2 teaspoons Dijon mustard

  • 1 1/2 teaspoons honey or maple syrup

  • 1 clove garlic, pressed and minced

  • 1/4 teaspoon salt

  • dash of red pepper flakes & dried thyme

Instructions:

  1. Combine oil, lemon juice, mustard, honey, garlic cloves, and spices in a bowl.

  2. Whisk the ingredients together until emulsified. Taste, and add additional salt or honey if necessary. The dressing should be a little tart, but if it’s too tart, add a little more sweetener to balance out the flavors. If it’s not tart enough for your liking, you can add more lemon juice.

  3. Store in a jar with a tight lid in the refrigerator after using. Always give the dressing jar a couple of shakes before serving. Olive oil will solidify when refrigerated, so make sure to take it out a few minutes before serving.
