THE BEST Peanut-Butter Banana Brownies

With no added sugar or butter, this recipe will leave you speechless! These brownies are super moist, sweet, and delicious! Put your overripe bananas to use instead of tossing them away.

Ingredients: (yields 12 brownies)

  • 3 medium overripe bananas

  • 2 large eggs

  • 3/4 cup packed blanched fine almond flour

  • 1/3 cup packed coconut flour (or can substitute for all-purpose flour)

  • 1/2 cup unsweetened cocoa powder (I used Hershey’s brand)

  • 1/2 cup creamy peanut butter

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F and spray an 8x8 inch baking pan with non-stick cooking spray.

  2. In a blender or electric mixer, add bananas, eggs, and vanilla extract and blend until smooth.

  3. In a large bowl, whisk together almond flour, coconut flour, baking soda, baking powder, and salt.

  4. Slowly fold in the dry mixture to the wet mixture and stir until well combined.

  5. Add in peanut butter and chocolate chips and mix until evenly distributed.

  6. Spread batter evenly into prepared pan and bake for 18-24 minutes, or until toothpick comes out dry.

  7. Allow to cool on a wire cooling rack for 15-20 minutes until cutting out brownies.
