Sweet Potato and Spinach Frittata

Ingredients: (yields 4 servings)

  • 3 large eggs

  • 3/4 cup egg whites

  • 1 cup unsweetened almond milk

  • 2 cups sweet potato, peeled and diced

  • 2 cups firmly packed spinach

  • 1/2 small red onion

  • 2 cloves garlic

  • 1/4 cup goat cheese

  • 1 tsp Kosher salt

  • 1/2 tsp black pepper

  • 2 Tbsp Olive oil

Instructions:

  1. Preheat oven to 350F.

  2. Whisk together eggs, milk, salt and pepper in a medium bowl.

  3. Place skillet over medium heat and saute sweet potatoes with 1 tbsp olive oil until potatoes are tender and golden. Remove and keep warm.

  4. Saute spinach, onion, and garlic until spinach is wilted and tender in remaining 1 tbsp oil. Remove and keep warm.

  5. Add spinach and potato mixture to the egg mix and stir until combined.

  6. Pour into a greased 10-inch round deep pan or casserole dish and top with goat cheese.

  7. Bake for 15-20 minutes, or until the eggs are puffed and appear cooked and the center jiggles just a bit.

  8. Cool on a cooling rack and top with garnishes, hot sauce, etc!
