Sweet Potato and Spinach Frittata
Ingredients: (yields 4 servings)
3 large eggs
3/4 cup egg whites
1 cup unsweetened almond milk
2 cups sweet potato, peeled and diced
2 cups firmly packed spinach
1/2 small red onion
2 cloves garlic
1/4 cup goat cheese
1 tsp Kosher salt
1/2 tsp black pepper
2 Tbsp Olive oil
Instructions:
Preheat oven to 350F.
Whisk together eggs, milk, salt and pepper in a medium bowl.
Place skillet over medium heat and saute sweet potatoes with 1 tbsp olive oil until potatoes are tender and golden. Remove and keep warm.
Saute spinach, onion, and garlic until spinach is wilted and tender in remaining 1 tbsp oil. Remove and keep warm.
Add spinach and potato mixture to the egg mix and stir until combined.
Pour into a greased 10-inch round deep pan or casserole dish and top with goat cheese.
Bake for 15-20 minutes, or until the eggs are puffed and appear cooked and the center jiggles just a bit.
Cool on a cooling rack and top with garnishes, hot sauce, etc!
